Double Drizzle: Munch Madness – West Coast Edition

Welcome to one of my two official entries to the #FrozenChefMadness contest through our friends at LifeofDad.com and Easy Home Meals in celebration of Frozen Food Month.

Those of us enjoying the big tournament (held in March) in EST often forget that our friends on the West Coast are witnessing the early games during breakfast hours. With these friends in mind, The Captain has come up with this dish- The Double Drizzle.

Chicken and waffles is a breakfast dish that is enjoyed by many across the country. Here is that dish with a twist – bite size chicken and waffles with a raspberry drizzle.

I used three items frozen raspberries (Dole), popcorn chicken (Tyson), and waffle bites (Eggo).

This dish is quick, easy, and tasty. Again, we want to avoid any snack clock violations, so here’s how you can break the full court press of hunger in the morning when the madness begins.

Popcorn Chicken
Preheat oven to 400.
Place chicken on cooking tray.
Flip chicken at 10 minutes to cook evenly.
Cook for another 8-10 minutes.

Waffles
This is awesome – you have two choices – microwave or toaster. I chose toaster.

Raspberry Drizzle
Sounds complicated but it is really easy.
Make sure to thaw raspberries for 30 minutes before you begin.
Put raspberries in saucepan.
Add 1/4 cup of white sugar, 2 TBSP of Orange Juice to raspberries.
In a separate container, mix 2 TBSP of cornstarch with 1 cup of water. Whisk until mixed.
Add cornstarch to raspberries. Bring to boil. Stir frequently.
Either handmix or our drizzle into a mixer and puree until desired consistency is attained.
Once the drizzle cools it thickens.
Drizzle over waffles and chicken.

From freezer to plate in under 20 minutes. The raspberry drizzle is a tasty unique snack. Make it for yourself, or take it to pitch in at a party. Either way, it is a fun snack that won’t bench you in the kitchen, but will let you get into the game.
